Cookie Dough Brownies

Today was my first attempt at making brownies from scratch all on my own. All on my own means I didn't use a recipe and instead decided to wing it. I will admit that next time I would like to tweak the recipe for a slightly different brownie but nevertheless I will include what I concocted below.

You will need to mix up the cookie dough...don't worry this is eggless and there is no baking powder or baking soda in it either. I originally made this to eat as is, you know, will a spoon. It also makes a great sweet dip too! Today I found another purpose, slathering it on top of brownies. Feel free to leave out some of the extras like oats, cinnamon, and peanut butter M&M's is you wish!


Cookie Dough:½ Cup Butter, Softened

1 1/3 Cup White Granulated Sugar

1 Teaspoon Pure Vanilla Extract

1 Pinch of Salt

 1 Cup Flour
 1/4 Cup Creamy Peanut Butter
 1/3 Cup Heavy Cream
 1/2 Cup Milk Chocolate Chips
 3 Tablespoons Oats
 1/3 Cup Peanut Butter M&M's
 Sprinkle Ground Cinnamon
 Directions:1.) In a mixing bowl creambutter and sugar. Stir in vanilla and salt.

2.) Sift flour and mix. Onceflour is incorporated, stir in peanut butter.
3.) Slowly begin mixing in heavycream.
4.) Add in the goodies! Stir inmilk chocolate chips, oats, M&M's.
5.) Add a sprinkle of ground cinnamon on top and serve or covered tightlyand store in the refrigerator until ready to serve.

Now, onto the brownies and my baking experiment.

I remember making some recipes in the past where you sift the dry ingredients first and then add the liquids so I decided to go that route. I made a well in the middle of my dry ingredients and added my eggs, vanilla, and oil.

Once it was well mixed and nearly done I decided to melt some milk chocolate chips to make sure it was chocolatey enough for extra measure!

This is what the brownie looks like out of the oven and cooled.

I didn't take a photo but I decided to spread the softened cookie dough onto a sheet of wax paper the size of my pan and popped it in the freezer for 15-20 minutes until firm. Then I was able to transfer the cookie dough and place it right on top of the brownie, easy!

Back to the brownies...I was shooting for a fudgy brownie but ended up with more of a cake brownie. I recognize my mistake. I had one too many eggs and likely too much baking soda, and powder. I will decrease those amounts next time.


Brownie:1 ½ Cups Flour

¾ Cup Granulated Sugar

1 Teaspoon Baking Powder½ Teaspoon Baking Soda

1 Teaspoon Salt½ Cup Cocoa Powder

2 Eggs

1 Tablespoon Vanilla ½ Cup Olive Oil

½ Cup Milk Chocolate Chips, meltedDirections:

1.)   Preheat oven to 325 degrees.
2.)   Sift dry ingredients such as flour, sugar, bakingpowder, baking soda, salt, and cocoa powder in a mixing bowl.
3.)   Make a well in the middle of the dry ingredientsand pour egg, vanilla, and oil. Mix well.
4.)   Melt milk chocolate chips in the microwave andstir into batter. Spray a square 8x8 pan and pour batter into pan.
5.)   Bake at 325 for 28 minutes and allow to fullycool before adding cookie dough.
